A perhaps poorly labeled record of exactly what happed.

I typed "wine explorer /desktop=wine,1024x600 C:\\Program Files\\Ubisoft\\Heroes of Might and Magic V\\Demo\\bin\\H5_Game.exe" into terminal and the window I requested appears, first the default blue, then it turns black. Wine  said that it could not open types.xml, calling lots of statements "stub!" and also that it was debugging. I waited for a long while before it said what the problem was (with lots of what I recognized as machine code) and the window turned back to its default blue and closed.

First thing to do is to test with latest Wine release, today it's 1.1.38

Also, is there any reason you run in a virtual desktop and not from the app's
directory?

I tried to run it outside the virtual desktop first but some very weird things happened. A sort of mutated desktop appeared. The panels had expanded massivly and the only icon on my desktop was for Heroes of Might and Magic V, and i didn't have that one in the first place. 

I will see about getting a newer version of wine.

It (sort of) works on the new version. Now I just have to get past the title page...

The retail game and the demo have been reported to work well : http://appdb.winehq.org/objectManager.php?sClass=application&iId=3233

Is this still an issue in current git? (1.3.1)

I can confirm this in the demo. The game starts, you get a splash screen, it changes your screen resolution, but never takes focus.

Terminal shows

then I get a flood of fixme:d3d:query_init Unhandled query type 0x4.

Using a virtual desktop works around it.

Looked a bit strange, so I tried manually setting VideoMemorySize in the registry, but that did not help.

The demo works very well for me in current wine (1.4-rc2), arch linux X64 and NVIDIA hardware. Can someone else confirm?

You mean comment #6, right?

I forgot to say, the game does not get focus when the Ubisoft intro video begins to play, but I can get the focus back by tabbing to the game. Afterwards I am able to start a scenario and play the game. I have not tested with a virtual desktop.
