When clicked, the column headers (Filename, Path, ...) change to a selected state and get a new "pressed" style. When selecting another column, the next column is successfully selected but the previous one's style is still left untouched, instead of being reset.

No console output.

Hi, could you try with native comctl32 please?

winetricks comctl32 is a workaround.

I still get this behavior when running mp3tag with a theme selected in winecfg's Desktop Integration ("Baltimore", to be exact).

With no theme it indeed works properly.

Please open a separate report for that, with attached screenshots with this theme on Windows and wine.
